Cooked quinoa makes a great nutritious base for a cookie or muffin, add chunky fruit pieces for a great texture combination
Makes 10 mini muffins
Ingredients:
2 cups cooked quinoa
2 tbs chia
¼ cup hot water
¼ cup peanut butter
¼ cup coconut syrup
½ tsp baking powder
1 apple- chopped into small chunks
Method:
Mix all ingredients together until sticky, mixing through the apple chunks last.
Pack the mix into small silicon muffin trays (easiest to remove) and bake for approximately 20-25 minutes until the tops are golden and crisp. As an alternative option you could flatten into cookies like the chocolate quinoa cookies later in this book.
Other options: Substitute the peanut butter with almond or cashew butter and substitute the apple for pear or mango adding vanilla or cinnamon.
