Vanilla Choc Swirl Fudge

So quick and easy and so many options so get creative. Simply, blend, chill and serve!

Makes approx 12 small squares

1 cup cashew paste or butter– softened
½ cup coconut oil– melted
¼ tsp vanilla powder
pinch salt
3 tbs melted cacoa liquor
Optional, 4-5 drops stevia

Blend the nut butter, coconut oil, vanilla and salt together until well mixed, the mixture should be very soft and drippy.

Spoon into a small lined loaf pan. Melt the cacao liquor and stir through the stevia if desired, swirl it through the fudge mix to create a marbled effect.

Chill in the fridge for an hour or so until it sets. Keep stored in the fridge.

Note: You could omit the cacao and press other ingredients on top- for example coarsely ground gojis would create a pretty effect or even use cocoa nibs or nuts on top.
