An extremely quick and simple raw treat… a healthy ‘ferrero rocher’ vibe if you like! You could also make these plain without the frosting if preferred and just press the cacao into the base.
Makes an 8” tray
Ingredients:
1 cup hazelnut butter
1 packed cup dates
½ cup as unroasted cocoa powder
Frosting:
1/3 cup coconut oil (not melted)
2 tbs coconut syrup
¼ cup as unroasted cocoa powder
cacao nibs (optional)
Method:
Blend the base ingredients together and press firmly into a lined 8” tin. Mash the frosting ingredients together to mix fully and then roughly spread across the base. Sprinkle with cacao nibs.
Place in the fridge or freezer to firm up as these will be very soft (not necessarily a bad thing!) at room temperature.
