“Energy balls are always such a versatile treat and so easy to whip up- the tiger nut flour gives a great texture to these balls!”
Makes approx 12 balls
Ingredients:
1 cup tiger nut flour
1/3 cup nut butter of choice
1/3 cup cocoa powder
2 tbs coconut syrup
1/2 packed cup medjool dates (approx 5-6)
Toppings of choice to roll in- we used a little coconut, chia, cacao nibs
Method:
Add all ingredients to a food processor and blend well until you have a thick smooth ‘dough’. Roll into balls, roll in toppings as desired and chill to firm up. These will keep well in the refrigerator for up to a week.
You could add chopped nut pieces and/or dark chocolate chunks for a chunky cookie style ball.
