Homemade hummus is really tasty and the great thing is you can add in some extra ingredients to make it even tastier. In this recipe, we added carrot and ginger to a basic hummus recipe but you could also add a little beetroot and cumin.
Makes approx 1 ½ cups worth
Ingredients:
2 medium carrots, peeled and ends removed
2 garlic cloves, peeled
¼ tsp cayenne pepper
1 Tbsp tahini
400g of cooked chickpeas– well drained
3 Tbsp olive oil (or hemp seed oil or rapeseed oil)
1/2 tsp ground ginger
juice of half a lemon and 1 tsp zest
sea salt to taste.
Method:
Cooked the chickpeas until soft, drain and place in a blender.
Add the remaining ingredients and blend on high until smooth. Add a little extra oil if a smoother texture is needed. Add salt to taste. Store in an airtight container in the fridge for up to five days.
