Walnut Bean Burgers

“Ground walnuts are combined with sun dried tomatoes to make these delicious burgers. Perfect for popping on the BBQ!”

Makes approx 6 burgers (depending on size)

Ingredients:

3 sun dried tomatoes

2 cloves garlic

1 small red onion

1 x 400g can black beans

1 cup ground walnuts

1 tbs ground flax mixed with 3 tbs hot water

¼ – ½ tsp salt (to taste)

Method:

Finely chop (or process) the sun dried tomatoes, the garlic and onion and then sauté with a little coconut oil for 5 minutes to soften.  Add to a food processor along with the remaining ingredients and blitz to a thick rough paste.

The mix should be very stiff. Form patties with you hands and place on a lined baking sheet. Bake at 180C for approx 30 mins until browned or pop on the barbeque!
