A delicious way to add a bit of excitement to your quinoa. Perfect with our coconut curry!
Serves 4
Ingredients:
1 cup uncooked quinoa
3 cup boiling water
1/3 cup coconut cream flakes
1/2 cup mango
A squeeze of lime- optional
Fresh coriander- optional
Method:
Rinse the quinoa well and transfer to a medium sauce pan. Add the boiling water and coconut cream flakes, stir briefly to mix through. Bring to the boil and then simmer for 15 minutes. Put the lid on and turn off the heat allowing the quinoa to sit for 5 minutes.
The quinoa should now be creamy, moist and fluffy, ready to serve.
