Our New Popcorn Gives These Delicious Cookies a Nice Crunchy Texture!
Makes approximately 10 cookies
Ingredients:
1/2 cup coconut oil– melted
1/2 cup coconut sugar
1 1/2 cup oatmeal (I blitzed up GF porridge oats until they were coarse)
2 tbs brown flax mixed with 1/3 cup warm milk of choice
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cup plain popped popcorn
Method:
-Mix all ingredients (other than popcorn) together in a medium bowl. Add the popcorn last and stir through to mix evenly. The mix should be soft but easy to form into cookie shapes with your hands.
-Press into rough flat cookie shapes on a lined baking sheet. Bake for 10 min at 180C until lightly golden. Allow to cool for 5 minutes before removing from the tray and eating. Best eaten with 48 hours.
