Once ready, there are endless ways to naturally dress your popcorn up without the need for unnatural flavours or refined cane sugar that is found in standard ready made popcorn mixes. Our favourites include coating with cinnamon, agave syrup or mixing with cacao or our freeze dried fruits which our kids love – think Strawberry Popcorn! Makes approximately 16 squares
For the tiffin:
- 1 Cup Dried Fruit (I used chopped Dates and Raisins)
- 1 Cup Chopped Nuts
- 1 Cup Buckwheat Flakes
- 1/2 Cup Melted Dark Chocolate Couverture
- 1/4 Cup Coconut Oil
- 2 Tbs Coconut or Agave syrup
For the icing:
- 1/4 Cup Coconut Oil
- 2 Tsp Coconut or Agave syrup
- 2 Tbs Cashew Paste
- 1-2 Tsp Wheatgrass (To Taste)
- 1/4 Tsp Vanilla Powder
- Sprinkling of Dark Chia Seeds– Optional
-Add the dried fruit, chopped nuts and buckwheat to a medium bowl and toss to mix.
-Melt the dark chocolate and coconut oil and mix with the syrup to blend. Pour the mixture over the dry ingredients and stir to coat evenly.
-Press the mixture very firmly into a lined 8″ square pan.
-For the icing, melt the coconut oil and mash the cashew paste into it with the remaining ingredients to achieve a thick soft and smooth paste. Spread this over the top of the tiffin evenly and sprinkle with chia if desired.
-Chill until firm before slicing to serve.
- 1/3 Cup Popcorn Kernels (we used the ruby red ones)
- 1 Tsp Coconut Oil
- 1/4 Cup Peanut Butter
- 1/4 Cup Coconut Syrup
- 1/2 Tsp Cinnamon
- 1/4 Tsp Salt (optional)
- 1/2 Cup Dried Fruit or Nuts (I used chunks of dried apricot for an extra ‘caramel’ flavour) – Optional
-Add the popcorn and coconut oil to a large lidded pan. Heat until the kernels begin to pop and then shake the pan over the heat continuously until popping subsides (approximately 3 minutes).
-Meanwhile mix the remaining ingredients (except the fruit/nuts) together in a small bowl, warming through if needed to ensure it is runny enough. Once the popcorn is ready, pour over the coating along with fruit/nuts if using and toss or stir to fully coat.
