These easy flourless pancakes make a super simple festive breakfast or dessert….jazz them up with different flavours for unlimited variations!
These pancakes use our delicious almond paste and we simply can’t get enough of it for easy flourless baking. Have you purchased the almond paste yet… if so what successes have you had? We’d love to hear from you!
makes 4-6 pancakes (serves 2)
- 2 large eggs
- 100g almond paste
- 10g coconut sugar
- 50g dried cranberries (extra for garnish if desired)
- 1/4 tsp cinnamon
- 1-2 nectarines (or similar)
- Sugar free marmalade (or other drizzle sauce of choice)
-Whisk the eggs with the almond paste, then stir in the coconut sugar, cinnamon and cranberries.
-Heat a frying pan with a little coconut oil and add a dollop of approx 3tbs worth of batter for each pancake into the pan, they will naturally spread a little. Fry for a couple of minutes before flipping and cooking for a further minute until golden on each side.
-Serve stacked with mini oranges, extra cranberries and a drizzle of syrup of choice, we’ve used a sugar free marmalade as a quick and easy option!
-You can also use other fruit of choice if preferred…how about a fresh cranberry compote drizzle over the top?
