We’ve put a twist on the standard overnight oats by using our rice flakes with this recipe. Simply soak rice flakes and coconut milk powder in hot water and add your toppings. We suggest trying banana or our freeze dried banana, our cinnamon and our chopped nuts or even our matcha tea powder!
Overnight Rice Flakes
Ingredients
serves 1
- 1/2 cup brown rice flakes
- 1 heaped tbsp coconut milk powder
- 1 cup boiling water
Method
-Stir together the rice flakes, coconut milk powder and boiling water. Cover and allow to soak overnight
-Add your toppings
Flavour Ideas
-Slice half a banana and lay in the bottom of the serving dish, Spoon the rice into serving dish and add chopped nuts, the remaining banana slices and a pinch of turmeric and cinnamon to the top (extra spices could also be stirred through the rice mix)
-Mix with half a small mashed banana and 1/4 tsp matcha green tea powder. Add a a touch of extra water/milk if a looser texture is desired. Spoon into serving dish and add remaining banana slices, and flaked coconut.
