For many of us at Real Food Source, teff brings back memories of eating Weetabix as a kid. In the recipes below you get the flavour associated with Weetabix but without the gluten! Teff is a good source of protein, fibre, vitamins and slow release carbohydrates. We hope this provides some breakfast inspiration!
Teff Weetbix
Ingredients
Makes 3 small biscuits
- 1/2 cup teff flakes
- 1 heaped tbsp ground linseed
- 2 tbsp hot water
- 1 tbsp coconut blossom syrup
Method
-Mix the linseed, syrup and water together and allow to sit for a few minutes until thickened.
-Mix with the teff flakes until they are well coated and can easily be pressed together (add a tiny touch of extra water if too dry).
-Press into the bottom of muffin cups (or similar) and bake at a medium heat approximately 150C for 15 minutes until golden at the edges and pulling away from the muffin cups.
-Serve with non-dairy milk, dried fruit and/or syrup as desired.
Chocolate Teff Porridge
Ingredients
Serves 1
- 1/3 cup teff flakes
- 1-2 tsp coconut blossom syrup
- 1 cup hot non-dairy milk/ 2 tbsp coconut milk powder stirred into water
- 5-6 dark chocolate buttons, roughly chopped
Method
-Roughly chop the chocolate buttons
-Mix the teff, syrup and milk together, sprinkle the chopped chocolate on top
-Pour a little extra milk on top if desired.
