These burger patties are made up of 3 excellent sources of protein – chickpeas, walnuts and quinoa! Add herbs and garlic to that mix and you have a delicious veggie based burger pattie that you can sandwich between a fresh roll and top off with your favourite toppings!
Chickpea, Walnut & Quinoa Burgers
Makes approx 8 burgers
Ingredients
1 1/2 cup cooked chickpeas
3/4 cup walnuts or ground walnuts
1/2 cup cooked quinoa
2 tbs flax mixed with 1/4 cup hot water
4 sun dried tomatoes (or 2 tbs tomatoes paste)
2 tbs tamari soy sauce or liquid aminos
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1 tbs freeze fried beetroot (optional)
Method
Add all ingredients to a food processor and pulse together to get a sticky coarse mixture. It should not be too sticky to make patties- if needed add up to 1/4 cup flour of choice (almond flour, gram flour, fine ground oats or plain protein powder should all work).
Add a teaspoon of coconut oil to a frying pan, fry the patties over a medium heat for a few minutes on each side until golden brown. Alternatively they should be robust enough to BBQ them.
Top your burger patties with some fresh avocado, rocket and sliced tomato and sandwich them together with a fresh wholewheat roll.
