Creamy Spiced Pumpkin Mug with our Ginger, Cinnamon and Maple Syrup

Satisfy your taste buds with our Creamy Spiced Pumpkin mug full spiced with our new ground ginger, cinnamon and nutmeg.

This recipe uses grated squash or pumpkin and a dollop of nut pastes for super creaminess. You can use either of our almond or cashew pastes.  For an even more intense nut flavour try our almond or cashew butters (our pastes are made with unroasted nuts so have less intense nut flavour than our butters that are made from nuts that have been roasted in the oven to intensify the nut flavour).

This mug full has a subtle creamy spiced flavour and the squash is not very pronounced. For a more deeply flavourful mug try roasting the pumpkin or squash first. You could roast and puree a larger batch and save a little bit aside for this mug full. Alternatively use a canned pumpkin puree.

Recipe: Creamy Spiced Pumpkin Mug

Ingredients: 

1 cup boiling water

1 – 2 tsp almond or cashew paste

¼ cup grated squash or pumpkin

½ tsp mixed ground spices to taste- try our ginger and cinnamon

a teaspoon or two of maple syrup if you want a hint of sweetness

grated nutmeg on top to finish- optional

Method: 

Add all ingredients to a small pan and simmer whilst stirring well for 5 minutes. Blend with a stick blender and serve in a mug with a little grated nutmeg on top.
