Our new date paste addition to our range makes ‘no bake’ balls and bars super easy, no blender or processor needed! With Halloween just around the corner we’ve made a pumpkin spiced version, a great way to use up your carved pumpkin guts! These balls have the flavours of pumpkin pie with pumpkin puree, cinnamon and our new spices – ground ginger and nutmeg. As we use our new and convenient date paste, there’s no need to soak and blend dates – simple mix in well the date paste. We also use our nut flours and butter so there’s no need to grind any nuts either, you can simply make in a bowl with a good amount of mixing if you don’t have a blender. Recipe: Pumpkin Spiced Date Balls
Makes: 12-15 balls
Ingredients
1 cup (120g) ground nuts (we used ground brazils but almond, pecan or walnut will work just as well)
1/2 cup (+/- 88g) date paste
1 Tbsp nut butter
1 Tbsp shelled hemp
1/2 cup (+/- 112g) pumpkin puree
1 tsp cinnamon
2 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp ground cloves
pinch of salt
desiccated coconut for coating
Method
To make the pumpkin puree, peel and chop the pumpkin into small cubes and boil until the pumpkin is soft. Drain the water and mash or blend the pumpkin into a smooth puree. Set aside to cool slightly. (For a more intense pumpkin flavour, you could roast the pumpkin and puree as soon as it comes out the oven)
Mix in the rest of the ingredients in a big bowl.
Sprinkle your coconut on a tray or big plate.
Roll into small balls and place onto the coconut. Roll the balls around the coconut to coat them.
**Store in an airtight container in the fridge and consume within 2 days or keep frozen for up to one month and grab a bite whenever a sweet treat craving stricks**
