During the cold winter months, nothing can beat a delicious warming bowl of porridge in the morning (or any time of day in fact!). As much as we love porridge oats, variety (and cinnamon!) is the spice of life so why not switch up your oats for our naturally gluten free amaranth flakes instead. Amaranth flakes are an excellent source of protein, fibre, magnesium and they are also gluten free.
The amaranth flakes provide a super creamy texture and paired with the cinnamon and berries, they make the perfect warming festive bowl.
Recipe: Amaranth Berry Porridge
1/2 cup amaranth flakes
1 1/2 cups non-dairy milk*
1/2 tsp cinnamon
1 tsp honey or syrup
Mixed berries for serving (fresh or any of our freeze dried berries)
Add all ingredients to a medium saucepan (other than berries) and simmer whilst stirring for approx 8 minutes until thick and creamy. Add a dash more water to reach desired consistency. Serve with berries or chopped fruit of choice over the top.
*you could substitute the milk with boiling water and 1/4 cup coconut milk powder for a quicker cook time.
