This vegan style cheese is a great addition to your cheese board! As well as being dairy free, it’s fun to make and full of flavour! This scrummy cheese also works well sliced up on pizza or melted in a ‘cheese’ sandwich.
Recipe: Vegan Sliceable Yellow Cheese
1 cup (240ml) water
2 tbs agar flakes
3/4 cup cashew butter (or 150g)
1/3 cup water
3 tbs lemon juice
2 tbs coconut oil
1/4 cup tahini paste
1/2 tsp turmeric
1 1 /2 tsp salt
1/4 tsp smoked paprika
2 tsp wholegrain mustard
1/3 cup nutritional yeast
1 tsp garlic powder
Have a dish ready for the cheese- something that it can easily be removed from.*
Add the 1 cup water along with the agar flakes to a small sauce pan, stir and bring to the boil for 1 minute.
Meanwhile add remaining ingredients to a food processor. Blitz together until very thick and smooth. Add the agar mix and blitz again for another 10-15 seconds. It will begin to set quite quickly as the agar cools.
Pour into the cheese mould of choice, allow to cool and then refrigerate to set. It should be ready to turn out of the mould and slice after approx. 1 hour in the fridge.
* Or alternatively line a dish with a few layers of cling wrap that come all the way up the sides so once the cheese is set you can remove it from the dish by pulling up on the clingwrap.
