Liven up your stir fries with the citrusy tones of lemongrass powder and the crunch of yummy cashews! We love adding lots of veggies too for a healthy and colourful dish.
Recipe: Lemongrass Cashew Vegan Stir Fry
1 ½ tsp lemongrass power
1 tsp grated ginger
juice of ½ a lime
1 Tbsp coconut oil
¼ cup coconut milk powder (high oil or our regular one will do)
¼ cup hot water
approx 3 cups worth veg of choice (ie: peppers, carrots, baby corn and courgette – prepared to allow for a similar cook time)
½ cup cooked rice noodles, rice or quinoa
generous sprinkle of cashew pieces to serve
Add all spices and oil to the frying pan/wok and cook on a medium heat for a few minutes whilst preparing the veg.
Mix the coconut milk powder with the hot water, then add to the pan.
Stir through then add the veggies. Cook for approx 5 mins until veggies are cooked.
Serve with noodles, rice or quinoa and a generous sprinkle of cashews.
