Start your day with our homemade granola. Warning, when you smell the granola toasting away in the oven, it will be hard to just eat it for breakfast! Mix it up by using your favourite chopped nuts, and add your favourite nut based milk or even custard for a delicious breakfast or dessert!
Recipe: Banana Bread Granola
Ingredients:
2 cups porridge oats
2/3 cup chopped walnuts/pecans
1/4 cup pumpkin seeds
3 Tbsp light agave syrup
3 Tbsp coconut sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
3 Tbsp coconut oil – melted
1/2 cup dried banana chips (mix in at the end)
1/ cup dried banana pieces
Method:
Mix all ingredients together (apart from the dried banana chips and pieces) until fully coated. Loosely press mix into a lined brownie sized tin in one thin even layer.
Bake for approximately 30 minutes at 150º C degrees or until golden. Allow to cool before breaking apart and mixing with the dried banana chips and pieces (cut up the chewy banana pieces with a pair of scissors before adding).
It will store well in an airtight container for a couple of weeks.
