Freezing the fruit and veg in advance makes this a super speedy creation, a nice alternative to a smoothie when you want something a little more substantial
Serves 2
Ingredients:
1⁄2 cup water
1⁄4 cup coconut milk
1 cup worth chopped frozen courgette
1 cup worth chopped frozen mango
2 tsp green tea
Juice of half a lime
2 tsp baobab powder (optional)
Toppings of choice
Method:
Blend together well until a very thick smoothie consistency. Spoon into a bowl and
top with extra fruit or other toppings of choice. Here we used fresh nectarine, chia
seed and freeze dried strawberry pieces.
