These delicious muffins are great for a quick breakfast on the go or a mid-afternoon pick me up. Try blending with a dollop of nut butter for a super creamy concoction!
Recipe: Green Tea Morning Muffins
Makes approx 6
1 cup oats
1⁄2 cup oat flour (ground oats)
2 tsp baking powder
1 Tbsp green tea
1⁄2 tsp vanilla powder
1⁄4 cup coconut sugar
2 mashed bananas (reserve approx 1/3 for ‘coins’ on top if desired)
1⁄4 cup coconut oil – melted
2 Tbsp chia seeds
1 cup non-dairy milk
Mix together the mashed banana, melted coconut oil, chia seed and non-dairy milk in a small bowl. Mix together the dry ingredients in a medium bowl then add the wet ingredients.
Spoon the batter into muffin or cupcake cups (these are quite dense muffins so jumbo muffins cups not advised as they may not cook through so evenly) adding banana slices on top if desired. Bake at 180C for approx 20 minutes or slightly longer depending on cup size.
