It’s so easy to whip up your own salad dressing to liven up any salad. Just 6 ingredients and you’ve got a homemade dressing that contains the energy-boosting MCT oil so you don’t hit that afternoon slump that often follows lunchtime. We’ve adapted the classic honey and mustard dressing and made a vegan version using maple syrup and mustard.
To make a well balanced salad dressing always try combining (in equal parts) something acidic (apple cider vinegar), an oil (MCT and/or olive oil), a sweetener (maple syrup), salt and then any additional flavours you wish to incorporate (we used mustard in this case but a herb or spice would work well too!)
Drizzle over salads like we’ve done here and store it in a sealed bottle in the fridge for about a week.
MCT MUSTARD MAPLE DRESSING
Makes: Dressings for 3/4 people
1 Tbsp maple syrup
1 Tbsp wholegrain mustard
2 Tbsp MCT oil
2 Tbsp extra virgin olive oil
2 Tbsp apple cider vinegar
salt & pepper
Mix together and serve. Will keep covered in the fridge for a week or so.
