The perfect way to pack veggies into your breakfast!
Serves 1
Ingredients:
1/2 cup porridge oats
1 cup hot water
2 tbs coconut milk powder
1 small carrot- finely grated
1 tsp grated fresh ginger or ground cinnamon
2 tsp coconut syrup or agave syrup to taste
Optional:
Handful walnuts and/or dried cranberries
Method:
Add the oats, coconut milk powder, water, ginger and grated carrot to a small pan on the stove. Simmer for 5-7 minutes until softened. Add a touch of extra liquid as desired.
Remove from the heat and serve immediately with the walnuts and cranberries on top or stirred through. Add syrup to taste preference.
