A simple single-serve dessert or snack that takes just 90 seconds in the microwave (and not much longer to prepare!)
We’ve used ground almond flour here for a lovely cake-like texture without the need for any grains, but you can use any finely ground nut-flour, or even a dollop of nut butter.
The recipe as photographed was baked in the oven for a golden top. It also works well cooked in a microwave, you just won’t get the golden top.
The recipe can easily be doubled/tripled to serve more, but for best texture, we recommend cooking in small baking dishes to ensure the middle is cooked through.
You can also use this as a great recipe base for other fruits in season.
Recipe: Apple & Almond pudding
Serves 1 (can easily be doubled/tripled)
Ingredients:
- 1 small apple – cored and pureed (you can leave the skin on)
- 1/4 cup ground almond flour*
- 2 tbs water
- ¼ tsp baking powder
- ¼ tsp cinnamon
- A sprinkle of pumpkin seeds on top – optional
Method:
Puree the apple and mix all ingredients (other than the pumpkin seeds) together in a small bowl to get a thick smooth batter.
Spoon into a small dish/ramekin suitable for the oven and bake for approx. 15-20 minutes at 180ºC until golden on top. This can also be cooked in the microwave on high for 90 seconds, but you just won’t get a golden top this way.
*This recipe works well with any finely ground nut flour or instead 2 tbs of nut butter swapped for the ground nut flour.
