In this recipe we’ve recreated the flavour of the well known Snickers bars – think crunchy peanut butter and dark chocolate! These bars could accompany your evening cup of tea or be added to any lunch box for an afternoon treat. This recipe is easily adaptable and you’ll see we’ve shared some replacements for certain ingredients incase you’re running low on those products. Recipe for Our Snickers Inspired Squares
Ingredients:
Base
- 6 tbsp peanut butter (or cashew nut butter)
- 4 tbsp agave syrup (or honey if not vegan)
- 30g cocoa butter drops (or coconut oil)
- 70g peanuts (salted or unsalted – it depends on your preference)
- 70g cashew nuts (salted or unsalted – it depends on your preference)
- 30g puffed teff (or puffed millet/ amaranth/ brown rice)
‘Caramel’ Layer
- 125g pitted medjool dates
Chocolate Layer
- 80g cocoa butter drops (or coconut oil)
- 2 tbsp agave syrup
- 35g cocoa powder
Method:
Before starting the base place the pitted medjool dates in a bowl and pour boiling hot water over them. Set aside
For the base
-Line a tray or dish (approximately 6 x 6 inches) with baking paper
-Roughly chop the nuts
-Melt the cocoa butter drops in the microwave or in a pot over the stove top
-Stir in the agave and peanut butter and then mix in the nuts and puffed teff
-Press the mixture into your tray/dish
For the caramel
-Drain the medjool dates and place them in a blender and blend until you get a smooth paste
-Spread it on top of the base layer
For the chocolate layer
-Melt the cocoa butter drops in the microwave or in a pot over the stove top
-Whisk in the agave syrup and then the cocoa powder
-Pour it on top of the date layer and place it in the refrigerator to set
-Cut it into squares and store in an airtight container
