Chia Jam is excellent on pancakes and is so simple to make. Any berries will work but strawberries work particularly well due their high pectin content creating a smooth base. The chia seeds add texture like the fruit seeds you’d get in jam, they thicken to bind the fruit together. If you prefer a smoother jam just grind the chia first using a pestle and mortar. The jam will keep in the fridge for a week.
Recipe: Chia Jam
Ingredients
1 cup berries (I used fresh strawberries*)
1 Tbsp white chia seeds
Approx. 1-2 tsp agave syrup to taste (depending on how sweet you like your jam)
1-2 Tbsp water (as necessary to achieve desired texture)
*You could also use our freeze dried strawberries if you don’t have fresh fruit. Simply add more water to the mix to rehydrate the strawberries. Add a little at time.
