MCT AVO TOAST WITH SEEDS
Serves 2
Ingredients
1 large avocado
1 Tbsp MCT oil (more if desired)
the zest and juice of one lime
a good sprinkling amount of salt and pepper
½ tsp dried or handful fresh chopped coriander
pumpkin and sunflower seeds to sprinkle over
Method
Mash the avocado with all the remaining ingredients. Spread over a couple of slices of toast or top a bed of salad leaves, a jacket potato or use in a wrap. Toss over the seeds to finish
