Tiger nuts make great homemade milk as the flavour is subtly sweet with a hint of caramel. Delicious!
Of course you could add cocoa powder (and a touch of coconut syrup) if you want a more indulgent chocolate milk. Alternatively add a handful of strawberries or a banana for a fruity blend. The fresh milk will keep in the fridge for 2-3 days.
Makes approx 1 litre
Ingredients:
1/3 cup tiger nuts
1 litre water
Method:
Soak the tiger nuts for 24-48 hours (much longer than other nuts) otherwise the milk is likely to be watery! Add with the water to a powerful blender and blend until totally smooth…. then a little more to be on the safe side. Strain through a nut milk bag or cheese cloth. A bonus is you can also set aside the pulp for making cookies!
Keep chilled and use within approx. 3 days.
