This is a wonderful cocoa mass produced from the finest Single Origin Dominican Republic cocoa beans. These beans are grown and produced in Los Bejucos, a region in the Dominican Republic. The cocoa mass is simply obtained from toasted, hulled and ground beans, without the addition of other ingredients. It has an intense cocoa aroma with fresh fruity notes. The acidity is balanced out by its bitter notes, creating a well rounded cocoa mass.

Note that this cocoa mass is made from roasted or toasted cocoa beans. Cocoa and cacao mean the same thin (http://en.wikipedia.org/wiki/Cocoa_bean) A cocoa bean is a cacao bean whether roasted or not. Raw food marketers unfortunately promote the idea that cocoa is roasted and processed while cacao is raw when there is actually no difference. To avoid confusion we use cacao and cocoa when referring to our cocoa mass, whether they are roasted or not (raw).
