Unlike cassia which is the common cinnamon you will find in supermarkets, true cinnamon is a milder, reddish brown cinnamon with a delightful aroma. Ceylon cinnamon contains less coumarin which consumed in high doses is said to have negative effects on health. They make a great addition to your spice rack because using cinnamon quills as opposed to ground cinnamon unleashes a lot more flavour without affecting the viscosity of the dish. For example, if you’re making a mulled wine or a cream based dessert and you want the flavour of cinnamon without the colour or texture of cinnamon – cinnamon sticks do the trick!

Suggested use:

Infuse the cinnamon spice into curries, cream or milk being used for ice creams or cream based desserts. Cinnamon Quills are great to infuse into hot drinks like golden milk , cinnamon-spiced hot chocolate, mulled wine and warm apple cider – simply strain the mixture before drinking. You can also break the sticks up slightly and put them in a grinder like you would salt. Grind a little over your porridge or anything you wish to add this delicious spice too.
