Our Organic Mace originates from the nutmeg trees native to Indonesia. Mace is the red lacy coating found on the outside of a nutmeg seed, which is removed by hand and then dried. During the drying process, the mace turns from bright red to a bold browny/orangey colour and takes on its characteristic pungent, peppery aroma.
With its warm, sharp and peppery character, Ground Mace is a dynamic spice and well suited to a number of dishes. The unique spice can also add an element of colour to dishes, giving them a slight hue of orange/yellow.
Mace goes well in sweet desserts such as fruit dishes, pastry, puddings, biscuits, muffins. It can also be used in light dishes such as soups and broths, or in cooking sauces, curries and spice blends for meat.
