Our un-roasted cocoa/cacao powder is made from the highest quality Peruvian cocoa beans from the cacao company Ecoandino. Cocoa that has not been roasted does not have the strong flavour and aroma associated with traditional roasted cocoa, however this does have a delightful milder flavour with a lower fat/cocoa butter content of 10-12%. Cocoa/cacao is rich in plant poly-phenols. Polyphenols are a group of plant-based micronutrients and cacoa is classified as a flavonoid within the Polyphenols group. These flavonoids have antioxidant properties, in other words, they contribute to the protection of cells from oxidative stress. Cocoa/cacao also contains minerals such as magnesium, iron, potassium and zinc. Cocoa beans that have not been roasted are claimed to have the highest nutrient density of cocoa.
Ecoandino cacao powder was one of the first cacao powders that was introduced into the UK kicking off the “raw” cacao phenomenon and many other’s who are selling this exact un-roasted cocoa powder are marketing it as ‘raw cacao powder.’ As pointed out in our blog post Can Cocoa Ever Be Truly Raw? the company that started the whole raw cacao craze in the UK was also actually marketing this un-roasted powder as raw. However, we do not sell it as raw as although un-roasted it is heated above 46 degrees as part of the pasteurisation process.
Note that cocoa and cacao mean the same thing. http://en.wikipedia.org/wiki/Cocoa_bean. A cocoa bean is a cacao bean whether roasted or not. Raw food marketers unfortunately promote the idea that cocoa is roasted and processed while cacao is raw when there is actually no difference. To avoid confusion we use cacao and cocoa when referring to our cocoa powders, whether they are roasted or not (raw). As this very product proves, calling it cacao does not make it raw!
