Our Organic Whole Green Peppercorns have a fresh and mild peppery flavour. They are less fiery in flavour when compared to our Whole Black Peppercorns and make an excellent addition to cream based sauces for steak, vegetables, chicken and fish. They are often used in Asian cooking, especially Thai Cuisine. Green and Black Peppercorns come from the same vine but what differentiates one from the other is that they are picked at different times.
Try adding them to cream based sauces for steak, chicken, vegetables and fish. When poaching meat or fish, add a few peppercorns to the liquid. If cooking fish or chicken en papillote (when food is sealed in a folded pouch and then baked) add a few peppercorns to the pouch to add subtle peppery flavour.
